I promise that after Easter I will cut it out with the oatmeal cookie recipes! There’s a Black Bean Recipe in the future, so don’t you worry! But since chocolate is out of the question for me because of Lent, we have another oatmeal cookie recipe. BUT these are way easier to make than the 45-Second Oatmeal Cookie I previously posted.
Believe it or not these cookies are made from only TWO INGREDIENTS. I found them on Pinterest and because they were so easy to make on Friday, I decided to make them again and share them with you all!
So, what will you need….
You will need:
2 Large Bananas
1 Cup of Quick Rolled Oats
Yes, that is it. Of course because there are not many ingredients in these cookies there is plenty of space for additional items!

On to the baking..
-Set your oven for 350 degrees and grease a cookie sheet (maybe two). I greased mine with coconut oil.
-Break the bananas into pieces and put in a mixing bowl
-Add the cup of oats
-Mix with a fork until they become incorporated. There will be some chunks of bananas left,
but don’t fret, that just makes the cookies more delicious!
-With a tablespoon, scoop the mixture and form it into a ball with your hands. The size is totally up to you.
I tend to make mine bite size though.
-Bake in the oven for 10-15 minutes.
These are delicious right out of the oven, but they are also a nice treat later on (if they last that long!). Plus they are made with such simple, natural ingredients. You could probably make the cookies bigger and it could act as a breakfast cookie to go along with some tea.
They are also nutritious. Bananas sometimes get a bad rep but the reality is that they are high in potassium, vitamin B6, and vitamin C. They are also useful in treating high blood pressure. The problems arise when you start taking them for granted, limit your banana to one per day at most. Oats also carry their own set of benefits. Oats are actually very high in protein. But they also help regulate blood sugar, regulate the thyroid, and soothe the nervous system.
Bake these bad boys up once and I guarantee you will be making them again and again! Or anytime you have a few bananas laying around.
