Creamy Avocado Soba Noodles



If you don’t love avocado then you have some explaining to do.
Even if you don’t I swear you will love this sauce. It’s creamy, its garlicky, its dairy free, and it is damn easy to make.

I have been a little obsessed with Pinterest lately. The Health and Fitness section inspires me and has the most amazing recipes. Vegan, Vegetarian, Gluten Free, you name it, they have it. I am always looking for new ways to make my plant-based dinners even more delicious solely for my boyfriend.

You see I love cooking for him, but he loves butter, cheese, cream, meat, all things that neither my body or mind are quite fond of. So we tend to meet each other half way when it comes to deciding on what to eat.

Everyday I go on Pinterest and try to find a recipe that he might enjoy that also fills my needs of a plant based meal. Thanks to the blogger from Oh She Glows I discovered this Creamy Avocado recipe and I  just knew it was going to be a hit.

Here’s what you will need:

1 ripe Avocado
½ a Lemon, juiced
1-3 Garlic Cloves
½ tsp Kosher salt
¼ cup Basil
2 tbsp Olive Oil

Package of Soba Noodles

Why don’t we get the water for the pasta boiling first? Fill up a sauce pan about ¾ the way full of water and bring it to a boil.

While you are waiting for the water to boil throw the garlic, olive oil, and lemon juice into a blender and blend until it is mixed. You can also use a food processor which actually Oh She Glows had initially recommended but the blender works just fine.

Next add the avocado, basil, and salt. Blend away until it is creamy.

Once your water is boiling (keep an eye on it while you are blending) throw the soba noodles in. I love soba noodles because they are so quick to cook and I love their consistency. You can either buy the 100% buckwheat noodles or they also have an extremely affordable ½ Whole Wheat ½ Buckwheat soba noodle if you are not gluten intolerant. You can find them at any health food store.

Once the pasta is cooked drain it, put it back in the sauce pan and add your avocado sauce!

That’s it! Done! Presto! Dinner is served!

This would make a great side dish to any dinner but is also a fantastic main course which is how I had mine. For a little bit more power mix it with a vegetable like steamed peas or broccoli. Add a side salad while you’re at it  for some more green goodness!
